Tasty Tuesday- Spinach and Mushroom Frittata


This was a easy, yummy dinner.  Hubby, Baby, and Mama all loved it.

Ingredients:

 1 (10 ounce) package frozen chopped spinach, thawed, and squeezed thoroughly to remove liquid
(I only had a huge bag, so I just eye-balled it)
4 eggs
1 cup ricotta cheese
3/4 cup grated Parmesan cheese
3/4 cup chopped portobello mushrooms
1/2 cup finely chopped scallions with some green tops
1/4 teaspoon dried Italian seasonings
1 pinch salt and pepper, to taste

Directions:

1.  Preheat oven to 375 degrees.
2.  In a large bowl, whisk together all ingredients until well mixed.  Spray a 9-inch pie plate with cooking spray and fill with the mixture.
3.  Bake for 30 minutes, or until browned and set.  Let cool for 20 minutes, cut in wedges and serve.

5 Ingredient Ravioli Casserole

This recipe is from Taste of Home's 5 Ingredient Cookbook.
It's delish, easy, and I make it pretty regularly.

Ingredients:
1 jar (28 ounces) spaghetti sauce
1 package (25 ounces) frozen cheese ravioli, cooked and drained
2 cups (16 ounces) small-curd cottage cheese
4 cups (16 ounces) shredded mozzarella cheese
1/4 cup grated Parmesan cheese

There you go 5 simple ingredients, you probably have a few of them in your pantry or fridge right now.

Directions:
(I was making 2, one to freeze and one to cook.  That's why mine is separated into two square dishes.)

1.  Spread 1/2 cup of spaghetti sauce in an ungreased 13in. x 9in. baking dish.

2.  Layer with half of the ravioli.

3.  Layer 1-1/4 cups of sauce.

4.  Layer 1 cup cottage cheese.

5.  Layer 2 cups mozzarella.

Then you just repeat everything.

The rest of the ravioli, I was one short, seriously!?

1-1/4 cup sause

1 cup cottage cheese.

2 cups mozzarella

Bake at 350 for 30-40 minutes until bubbly.  Let stand 5-10 minutes before serving.

Yummy!!

Tasty Tuesday-Cheesy Chicken

Cheesy Chicken

Here's a simple recipe that a lot of you have probably made in some form, but it's great to have in your back pocket for those quick week day meals.  Plus, it only has 5 ingredients.

5 tablespoons butter, melted, divided
1 cup crushed cheese-flavored snack crackers
1/4 teaspoon pepper
4 boneless skinless chicken breast halves
1/2 cup sour cream

1.  Place 1 tablespoon of butter in an 11x7x2 inch dish. Set aside.

2.  Combine cracker crumbs and pepper.

3.  Crush them up.

4.  Dip chicken in remaining butter, then spread with sour cream.  Roll in the crumb mixture.


5.  Cook at 350 for about 30 minutes or until it's cooked through.

My Famous Cookies

So, I make cookies pretty much every time I have a function to go to.  This all started with my mom.  She made cookies and somehow they got famous around my parent's circle of friends.  Then, when I got old enough, I made them and people still thought they tasted amazing.  People are always asking our secret and I think I am prepared to show you today.  This is big, really, really big!

Wait for it.....

1.  Buy a bag that looks like this.

2.  Turn it over.

3.  Follow that recipe.  It's not a secret at all.  However, some people swear they have followed the recipe exactly and they just don't taste the same.  I think it's just that everything tastes better when someone else makes it, but here's the recipe just in case.

2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
1 tsp vanilla
2 eggs
2 cups (12 oz  package)

Directions:

1.  Combine flour, baking soda and salt in small bowl.

2.  Beat butter, sugar, brown sugar and vanilla in large mixer bowl until creamy.  Here's maybe the one secret.  BUTTER FLAVORED CRISCO!  I'll put an extra large picture because it's that important.



3.  Add egg, one at a time, beating well after each.

4.   Gradually beat in flour mixture.

5.  Stir in morsels.  I put the whole bag in, minus the handful I eat.

6.  Drop by rounded tablespoons onto ungreased baking sheets.



7.  Bake for 9-11 minutes at 350 degrees.  I usually do 10 minutes, give or take.

8.  Eat and enjoy!!

Tasty Tuesday: Chicken Spinach Enchiladas

Ok guys, here's another crazy easy, delish, chicken recipe.  Once again, I took this recipe from 
Mix and Match Mama's blog.  I seriously get most my recipes from her.  They're not crazy complicated, but super delicious.


They were so good, I forgot to take a picture until after we had dug into them.

Ingredients:
6 flour tortillas 
1 pound chicken (I used 1/2 a rotesserie)
1 box frozen spinach (thawed and excess water squeezed out)
1 can cream of  chicken soup
green onions
1 cup tomatillo (green salsa)
1 cup shredded cheese

Directions:
1.  Preheat to 350 degrees.
2.  Spray 8 x8 pan with Pam.
3.  Shred chicken.
4.  Mix together chicken, spinach, cream of chicken, green onions (I just threw in a handful), and 1/2 cup tomatillo sauce.  

*Funny thing about the tomatillo sauce, I had no idea what this was.  I found it, but it was called green salsa.  I am a big chicken when it comes to salsa and all things spicy.  Tomatoes also give me crazy canker sores.  But, I have fallen in love with this stuff.  It's not spicy at all.  Where has this been all my life?!

5.  Spoon mixture into tortilla. Wrap and place seam side down in pan. 

*The recipe could have made 6, I overstuffed and only made 5, but they were busting at the seams after they cooked, so next time I'll probably make 6.

6.  Pour remaining 1/2 cup of that delish green salsa on top and sprinkle with shredded cheese.
7.  Bake for 30 minutes.

Make these tonight, they are SOOO good.  
I actually whipped them up the night before, so I just had to pop them in the oven the next night. 
Husband thought these would also be great with queso on top, but what wouldn't be great with queso on top?

Tasty Tuesday-BBQ Baked Chicken Tacos

I will start this post off by saying that I am in no way a cook, but I cook because, well, I have too.  I don't hate it, but I don't love it either.  It's a necessary evil.  One easy recipe that the husband, the baby, and I are alway's happy with are
Mix and Match Mama's BBQ Baked Chicken Tacos.

Easy, fast, delish.  So easy, seriously, you don't even have to think.  Throw in some rice and you've got a meal!

Ingredients:
1 lb chicken (sometimes I use rotisserie, sometimes I put some chicken breasts in the crock pot.)
green onions
BBQ sauce
shredded cheese
taco shells

Directions:
1.  Preheat oven to 350.
2.  Shred chicken. (I used half a rotisserie for this night, it only made 4 tacos, but I wanted to save the rest of the chicken for another recipe.  If you use the whole chicken, you'll get more tacos.)

3.  Mix in however much BBQ sauce you like.  I didn't put a ton because Blair was eating it too.
4.  Add some green onions.  I just eye-ball it.

5.  Place taco shells in an 8x8 pan.  Usually I line this with foil, but I was out.  Use the stand 'n stuff shells.  It makes life even more easy.
6.  Put chicken mixture in taco shells.
7.  Sprinkle shredded cheese on top.

8.  Place in oven for about 10 minutes or until the cheese is melty and yummy.


I put some in a little bowl for Blair and she loves it.
